Beans thoran is an excellent side dish with rice, moru curry and fish fry and I totally love this combo. I can eat beans everyday if I had too and I'm sure you would feel that way too after you try this easy recipe.

Beans thoran (beans sautéed with coconut)

Yield: 2-4 servings

INGREDIENTS:

Green beans - 2-3 cups
Cumin ½ tsp.
Turmeric powder - ¼ tsp.
Small onions - 2 to 3, roughly chopped (optional)
Garlic - 2 cloves, (optional)
Oil - 2 tbsp.
Mustard seeds - ½ tsp
Dried red chili - 2
Grated coconut - ½ cup
Salt- to taste
Water- 1 tbsp.

Directions:

Heat oil in a heave bottomed pan and splutter mustard seeds. Add dried red chili and sauté till they turn slightly crisp. Add the onions and sauté until cooked and slightly golden. Add the garlic cloves and brown for a few minutes. Add the turmeric and cumin powder and cook for 30 seconds. Add the beans, salt and water; mix together, close with a tight lid and cook on medium-low heat for about 7-10 minutes. Finally, add the shredded coconut mix and sauté for about 2-3 minutes, just to get rid of the rawness. I like it a bit crunchy, so I don't cook it for too long. Turn off the heat and leave the pan closed till ready to use.
