Cabbage thoran or cabbage stir fry is a dry vegetable dish made in kerala cuisine. Thoran is basically finely chopped or grated vegetables cooked with fresh grated coconut and spices.

Sautéed Cabbage with Carrots thoran

Yield: 2-4 servings


1 medium cabbage shredded
Carrots 4-5 shredded
Garlic – 3 cloves crushed
Grated coconut – ¼ cup
Whole dried red chili 3-4
Turmeric powder 2 tbsp.
Coriander powder ½ tsp.
Cumin powder ½ tsp.
Mustard seeds ½ tsp.
Oil 1½ tbsp.


Heat oil in wok or sauté pan; add mustard seeds until it sputters, then add red chili, and crushed garlic cloves. Add the turmeric, coriander and cumin powder and fry for 30 seconds. Add the shredded cabbage, carrots, and salt to the spice mixture and mix well. Cook covered on medium flame for 5-10 minutes. Added the shredded coconut and sauté uncover for 2-3 minutes and remove from heat.
