Kadai chicken is a dish made with chicken, onions ad tomatoes along with lots of spices. Kadai chicken is a gravy dish with lots of spices. This dish gets its name from the vessel in which it is made. The vessel is called kadai and that's the reason for the dish bieng called Kadai Chicken.
Kadai Chicken Curry with Potatoes
Yield: 6 servings
Chicken,8-10 bone-in thighs, legs, or whole chicken
Ginger 2 inch piece
Garlic 6-8 cloves
Oil 2 tablespoons
Onion ,chopped 1 large
Tomatoes,chopped 4 large
1 cup yogurt
Salt to taste
Green Chilly, 3-4 sliced
Potatoes, 4 cubed
Fresh coriander leaves,chopped 2 tablespoons
Whole dry red chilli
Coriander seeds 2 teaspoons
Cumin seeds 2 teaspoons
Black peppercorns 6-10
fennel seed 2 teaspoons
Dried fenugreek leaves 1 tablespoon
1. Dry roast the Gram Masala ingredients until light brown and grind to a coarse powder.
2. Grind ginger and garlic to a fine paste.
3. Heat oil in a kadai (wok) or a heavy bottom pot, add onion and sauté till lightly browned. Add tomatoes and salt and continue to sauté till the tomatoes become soft. Add ginger-garlic paste and continue to sauté for 2 to 3 minutes. Add 4 tablespoons of Gram Masala powder, chilli powder, turmeric powder, and mix well. Add chicken and stir continuously until the chicken starts to brown. Add half a cup of water and stir. Cover and cook on medium heat till the chicken is half way cooked. Added the potatoes, coriander leaves, yogurt, and green chilli and cook for 15 minutes. Cover and cook on medium heat until the chicken and potatoes is done.
